Since I am featuring recipes that contain ingredients on my staples list, it occurred to me that all these recipes are a perfect fit for Meatless Mondays.
Do you already have Meatless Monday at your house? If not, I hope to inspire you to start. It is a fantastic way to save both your budget and the environment!
Ingredients
- 1 tablespoon olive oil
- 1 small chopped onion
- 2 minced cloves of garlic
- 1 teaspoon cumin
- 1 tablespoon paprika
- 1 (28) oz can whole tomatoes or 2 (14) oz canned diced tomatoes
- 8 large eggs
- pinch salt
Instructions
- Preheat oven to 350.
- Heat olive oil in pan. Add onion and cook until translucent - about 6 minutes. Add garlic, cumin, and paprika and cook an additional 2 minutes. Pour tomatoes into a bowl. If using whole tomatoes, chop. Add to the onions. Turn heat to medium low and allow to cook down for about 20 minutes.
- Spread tomato mixture in the bottom of a 9x9 pan. (or, do I like did. I used individual gratin dishes). Crack eggs on top of tomato mixture. Place in oven and cook for 24 to 26 minutes.

Ok noy sure about eggs in tomato sauce, however i love the ingenuity of it! Also love the meatless monday theme. I try and fail to be vegetarian so this will give me ideas! Thank you!

My husband would like this- minus the onions.
I have a thing about eggs. I’ll only eat them if they’re scrambled or I’ll just eat the whites. So this won’t work for me
I do know that scrambled eggs and tomato sauce is delicious though. I guess I could try it that way and cook a shorter time.

just wanted to chime in that you can do this on the stove top too, in a large skillet (which makes it a really quick meal) by sautéing your onion etc adding the tomatoes and then (once the tomatoes are nice and hot) break your eggs open on top of them…if you want the egg whites cooked all the way then i put the lid on for a a minute or two…the steem cooks them. This recipe is really the best in the summer though, when you can use fresh tomatoes instead of a can! my whole family loves it …we like it with fresh bread for sopping up the yummy yolk and tomato juice at the end.
Jessica – Great suggestion! I’ve always just put them in the oven, but your way sounds quicker. And I TOTALLY agree that fresh is the way to go! I get really sad when my garden stops producing fresh tomatoes. There just isn’t anything as tasty. Andrea
