Rainbow Fruit Parfait

March 17th is St. Patrick’s Day. How will you be celebrating? How about starting your day with a rainbow that leads to a pot of gold?

This quick and healthy St. Patrick’s Day Rainbow Fruit Parfait is quick to assemble and will fill your family with healthy whole foods. (Ditch the skittles! This is the best way to taste the rainbow!)

All this recipe requires is a rainbow of fruit, granola and greek yogurt. Layer them in the glass as follows:

Fruit Rainbow

  • Granola on the bottom (your pot of gold)
  • Blackberries
  • Blueberries
  • Green Grapes
  • Pineapple (thaw some frozen or used canned if fresh is too expensive)
  • Clementine Slices
  • Strawberries, sliced
  • Top with a “cloud” of greek yogurt
  • Drizzle with a bit of honey if you choose

Warning: This is a highly addictive breakfast or snack that your kiddos will ask you for time and again! The good news is – it just doesn’t get any healthier than this!

3, 2, 1 Custard | Paleo Breakfast Recipe

There are only 3 real food ingredients in these quick and healthy custards.

Custard ingredients

Can you guess why this is 3, 2, 1 Custard? Um hum. You use 3 eggs, 2 ripe bananas & 1 can of coconut milk.

3, 2, 1 Custard is my new favorite breakfast treat. The flavor is exactly like banana bread – but these custards are gluten-free and free of any added sugar!

In case you have never cooked custards, they cook in what’s called a water bath. Simply place your custards in a baking dish large enough to hold them, then add hot water about 1 inch up the sides of the custard cups. Using a tea kettle and pouring it in while the custards are on the oven shelf eliminates a lot of spills.

I use half pint mason jars to make my custards. This makes the custards easy to store in the fridge. Plus, it makes for a nice breakfast on the go! If you fill the mason jars about 2/3rds of the way full it makes 6 custards. It also leaves room for toppings. My girls enjoy cinnamon, walnuts and a bit of real maple syrup on theirs. I’m partial to a bit of toasted coconut, and I love adding about a teaspoon of pumpkin pie spice to the blender too!

3, 2, 1 Custard

3, 2, 1 Custard

Ingredients

  • 3 eggs
  • 2 ripe bananas
  • 1 can coconut milk

Instructions

  1. Preheat oven to 350.
  2. Crack eggs into a blender. Add bananas and coconut milk. Blend.
  3. Place 6 half pint mason jars in a baking dish large enough to hold them.
  4. Divide custard batter evenly between the mason jars.
  5. To cook custards in a water bath, pour one inch hot water into pan surrounding mason jars.
  6. Bake for 45 minutes.
  7. Allow to cool in the water bath before refrigerating.

Cranberry Orange Granola

I’m sure you have your own favorite granola recipe. However, I wanted to share mine. Because 9 out of 10 people who were never asked said this was the best granola recipe for the holidays. I love the cranberry orange flavor combination as well as the fact that this quick and healthy recipe uses whole food ingredients like coconut oil and maple syrup.

You may want to double this recipe – some for you and some for gift giving!

Cranberry Orange Granola

Cranberry Orange Granola

Ingredients

  • 4 cups rolled oats
  • 1 1/2 cups chopped nuts
  • 1 C unsweetened large flake coconut (optional)
  • 1/2 t salt
  • 2/3 cup dried cranberries
  • Grated zest of 2 oranges
  • 1/3 cup coconut oil (may substitute butter)
  • 1/2 cup maple syrup

Instructions

  1. Preheat the oven to 300.
  2. Combine the oats, nuts, coconut (if using), salt, cranberries, and orange zest in a large bowl.
  3. Heat the coconut oil (or butter) and maple syrup over low flame, just until butter melts.
  4. Pour over the dry mixture and stir until thoroughly combined. Pour the mixture into a jelly roll pan.
  5. Bake for 50 minutes, stirring every 10 minutes.
  6. Let cool completely and store in an airtight container.

Granola Breakfast for Two

This really would be the perfect gift to bring if you are staying as someone’s house guest. Buy a 4 pack of frappuccinos because the bottles make the cutest packaging. Paint the four pack box white. Fill it with two frappuccinos, then fill one empty and clean frappuccino bottle with milk and fill one bottle with granola. Breakfast for two! Frappuccinos gross you out? Instead of two frappuccinos, fill one bottle with coffee beans and the other one with yogurt. Or make up a batch of my favorite granola and one of your favorite granola. Let your recipient decide what flavor they love.

I’m not sure if you’ve heard or not. There’s a holiday called Valentine’s Day. It’s about love and what do I love more than chocolate? Oh right. That family of mine. So how do I show them I love them? With my love of chocolate – in the form of homemade chocolate waffles.

I’m on a waffle kick lately. So, I decided to adapt my Four Grain Waffles into something a little sweeter. A little gooey-er. A little more appropriate for a holiday. These waffles are still loaded with whole grain goodness – and then a little somethin’ somethin’ by the addition of cocoa powder and chocolate chips!

Chocolate Whole Grain Waffles

Ingredients

  • 1 cup organic unbleached all purpose flour
  • 2/3 cup whole wheat flour
  • 2/3 cup oat flour (you can make oat flour by pulverized oats in the blender)
  • 3 tablespoon cocoa powder
  • 4 teaspoons baking powder
  • 2 tablespoons maple syrup
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup coconut oil
  • 1/4 cup organic chocolate chips

Instructions

  1. Preheat waffle iron.
  2. Combine all dry ingredients in a large bowl. Make a well in the center.
  3. In a small bowl, combine the maple syrup, buttermilk, eggs and oil. Whisk until blended. Pour the wet ingredients into the well of the dry ingredients. Mix with a rubber spatula just until combined. There may still be some lumps.
  4. Pour 1/2 cup batter onto the preheated waffle iron. Sprinkle about 10 -12 chocolate chips over, and cook per your waffle iron’s instructions.
  5. Serve with strawberries and powdered sugar.

Make Four Grain Waffles from Scratch

Continuing with my whole grain recipes theme, I have a fantastic waffle recipe you can make from scratch that I wanted to share with you!

First, I have to let you know I LOVE my waffle iron. It is idiot proof.

I. kid. you. not.

Just in case you care, I have a Cuisinart Classic Waffle Maker given to us by my mom.

Nope. Cuisinart did not pay me to tell you about their waffle maker. They should. I’m one happy waffle maker owning person. It’s the broken Cuisinart coffeemaker they don’t want me to tell you about. I’m sure that’s why I haven’t been contacted yet!

So the Cuisinart classic waffle maker? It’s the goods. And if you haven’t had homemade waffles, and have been settling for those frozen, mealy things you get in the freezer section, this recipe will change your mind! Go ahead, make a double batch. Eat half for breakfast and freeze the rest. They toast up just great!

Four Grain Waffles makes 8 waffles

1 C organic, unbleached all-purpose flour

2/3 C whole wheat flour

2/3 C oat flour (can pulverize oats in the blender to make oat flour)

1/3 C cornmeal

4 t baking powder

2 T sugar

2 C buttermilk

2 large eggs

1/4 C coconut oil

1. Preheat your waffle iron.

2. Combine all dry ingredients in a large bowl. Make a well in the center.

3. In a smaller bowl, combine the buttermilk, eggs and oil. Whisk until blended. Pour the wet ingredients into the well of the dry ingredients. Mix with a rubber spatula just until combined. There may still be some lumps.

4. Pour 1/2 cup batter onto the preheated waffle iron and cook per your waffle iron’s instructions.

5. Serve with fruit or syrup.
