Hidden Danger of Canning

From reading the title, you might think I’m talking about the danger of botchulism when canning. Sure, botchulism is a danger  – whether the canning is at home or commercially. Follow directions and the recipe exactly, heat for the proper amount of time, make sure everything stays sterile, wipe your rims to get a good seal, and then test your seal. Do that and you don’t need to fear botchulism.

If you take the time to watch the 20 second video, you’ll see I unearthed a new canning danger. {honestly? I’ve never heard how high pitched I can get. I’m amazed I didn’t break the glass in my house!}

Ok, I do know its the high altitude that did this. But every lid was blowing off as soon as I loosened the ring. In fact, my daughter hit the ceiling with one. It was a hoot.

No, I haven’t finished canning my Strawberry Lemonade Concentrate. I’m too busy filming jar lids flying across the room.
