Menu Plan Monday

In trying to Feed my Family of Four a Green Diet for $15/day, I hit the motherload of eggs and cottage cheese this week! I stocked up and am now  integrating them into our meals for the week! Our favorite is cottage cheese pancakes (the only way I eat cottage cheese) ~ recipe to follow tomorrow!

Monday:: Porcupine balls and cottage cheese salad with honey, grapes and nuts

Tuesday:: Spanish Frittata with fresh roast chiles and a nice crusty bread

Wednesday:: Grilled veggie pizza on homemade whole wheat crust

Thursday:: Cherry Tofu salad and a side of lime marinated fruit salad

Friday:: Rice and black bean burritos

  2. Oh I love porcupine balls! I haven’t had those in forever because my husband doesn’t like them. They may go on my standby list for a night when he stays out of town.
