Organic Costco Meal Plan

I’ve purchased my groceries from Costco and have the complete Costco shopping and price list available for you.

THIS WEEK’S ORGANIC COSTCO MEAL PLAN:

Sunday: Batch Cooking Day

Today was spent cooking so I have food ready to go for the rest of the week. And by cooking – I mean more like babysitting – since it’s not a lot of hands-on cooking taking place.

Sunday’s Easy Dinner of Quesadillas:

* Cooked chicken
* Spinach
* Shredded cheddar cheese
* Corn Tortillas
* Assemble and heat on griddle until cheese melts
* Serve with organic salsa

Monday:

Tuesday:

Wednesday:

  • Leftover Baked Blueberry Oatmeal with Crumble Topping
  • Roast Beef Sandwiches with orange halves and PB stuffed celery
  • Chicken Fried Rice

Thursday:

  • Scrambled Eggs
  • Chicken salad made with cooked chicken, chopped apple, chopped celery, and chopped almonds
  • Chili with baked potatoes

Friday:

  • Oatmeal with cinnamon and craisins
  • PB&Banana sandwiches
  • Broiled Tilapia with Golden Carrot Bake & Spinach Salad

Saturday:

  1. I’m am totally interested in doing this…but have one question about the menu. From what I understand, the shopping list you posted covers four weeks worth of food, right? However, are you only posting one week’s menu at a time? Just want to make sure I’m not missing anything! Thank you!

  3. This is a fabulous idea.I feed a family of eight and shop Costco weekly.I have the executive membership which gives you a percentage of what you spend throughout your year back.I am excited to try out some of your recipes.

  5. Awesome! We are getting a Costco this Fall, can’t wait! I like Sams but they have NO organic food and that’s what we mainly eat!

  6. Rachel – We used to shop Sam’s Club too – and you are right. They have NO organic food. Wait until you get Costco!!!!! You are gonna love it! Andrea

  8. I would LOVE to do this but it includes meat :( … We are pretty heavy on the veggies in our house

  9. We have a family of 8 and I try to limit my Costco trips to once every two weeks. We have a limited supply of organic food at ours, but we do have a decent amount. It seems like everytime I go they have more organic products though. I would love to try your baked oatmeal recipe. Do you have it posted somewhere? We have organic blueberries, peaches and strawberries at ours that would be great in baked oatmeal.

  11. Kathy – I try to do a few meatless meals every week, but you are right – we do eat meat. Maybe you can take that money from the meat and buy more veggie items? Andrea
