Are you following along with my Organic Costco Challenge? If not, here is the initial shopping and price list of what I bought for week one. Since this is week two, I needed a few additional groceries since I was out of things like organic eggs. Here is what I bought.

Sunday
- Fried Potatoes
- Tortillas with Refried Beans
- Cold Peanut Noodles
Meatless Monday
- Cranberry Orange Granola
- Leftover Cold Peanut Noodles with carrot sticks and orange slices
- Potato Fritatta with peas with chopped mint
Tuesday
- Cinnamon Sugar Toast (cut off crusts and make croutons to go with soup at lunch) and Green Tea Blueberry Smoothies
- Basil Tomato and Rice Soup served with homemade croutons
- Baked Chicken Fingers (made with homemade bread crumbs from last week) with potato wedges
Wednesday
- Cranberry Orange Granola
- Roast beef and cheese sandwiches with bananas
- Vegetarian Burrito Bowls and cucumbers
Thursday
- Make a big pot of oatmeal (like the 8 servings directions). Serve oatmeal with craisins and cinnamon and maple syrup.
- Peanut butter and banana sandwiches
- Chicken, Peas and Brown Rice
Friday
- Peanut Butter Banana Oatmeal Smoothies made with some of the leftover oatmeal from yesterday.
- Hard boiled eggs and potato salad.
- Fish tacos made from tilapia, corn tortillas and salsa.
Saturday
- Oatmeal pancakes with the rest of the oatmeal from Thursday.
- Leftovers
- Spaghetti with tomatoes and meatballs. (see my note here about how I am handling my ground beef purchase.)
Snacks:
Lime Baked Tortilla Chips and Refried Beans
Popcorn
Chocolate No-Bake Disappearing Cookies
