Organic Costco Meal Plan: Week 4

Organic Costco Meal Plan

The last week of the Organic Costco Meal Plan Challenge! In planning this week’s meal plan, I took a look at some of what I still have left:

  • Organic Carrots – I’ve been checking them every few days to make sure they aren’t getting soft and bendy. I’m happy to report they are still firm and ready to be eaten!
  • Celery – My celery is starting to wilt a bit. It will be consumed in the next day or two so it doesn’t completely spoil.
  • Organic Soymilk – We’ve been using the soymilk to make peanut butter banana oatmeal smoothies and brown rice pudding as well as just throwing a smoothie together with bananas and frozen blueberries. I have three boxes left & I suspect they will be gone at the end of the week.
  • Organic Brown Rice – I bought the 25 pound bag and will have LOTS of leftovers to last probably through the next few months. Since I have so much, I’m making a brown rice salad this week to enjoy as lunches.
  • Potatoes – I’m almost done with the bag and will definitely be using these up this week before they turn green.
  • Onions and garlic – I still have enough that they will last me the next few weeks!
  • Organic Ground Beef – I will use the last packet for two meals this week.
  • Organic Chicken – The two whole chickens are gone. I used the last bit in Chicken Fried Rice last night. I still have organic chicken broth to use and will be grilling the last package of organic chicken thighs this week.
  • Organic Whole Wheat Pasta – There are 4 lbs of pasta left. We will definitely be eating pasta this week!

There is more to report, but that gives you an idea of where we are. So, at the end of this week, I will take a picture of exactly what I have left.

  • Granola
  • Whole Wheat Tortillas with refried beans and cheese
  • Omelette

TUESDAY

WEDNESDAY

  • Eggs
  • Peanut Butter and Bananas wrapped in a whole wheat tortilla
  • **Potato Kibah with **Chocolate Molten Cakes (Company is coming!)

THURSDAY

  • Oatmeal
  • Whole Wheat Tortillas with refried beans and cheese
  • Meatloaf

FRIDAY

I was at Costco Sunday and they are selling fruit trees.I checked out the website for the nursery and they are quality trees.They can be grown in 5 gallon buckets and are of the dwarf species.I bought the grafted cherries ,pears and pink fury peaches and light blue plums.So excited cannot wait to grow my own fruit.
